Spinach Artichoke Dip


1 box frozen spinach, defrosted

1 can artichokes, coarsely chopped

1 cup mayonnaise

1 1/3 cups parmesan (adjust to taste)

1/2 cup monterey jack cheese (adjust to taste)

black pepper (to taste)

red pepper flakes (to taste)

garlic powder (to taste)

OPTIONAL: 2 chicken breasts, cooked and chopped

Stir everything up, reserving 1/4 cup monterey jack cheese. Taste it and adjust cheese and spices (I think the more cheese and spices the better). When you’re happy with the flavor, pour the mixture into a baking dish and top with the remaining cheese. Bake at 350 for about 20 minutes. I turned the broiler on for the last couple of minutes to try to get a little browning on top.
